Please help me with my fencing needs

I had a fencing company give me an estimate on a fence installation and they told me $5,000! So, I'd like to order the materials and do it ourselves.
I have been looking at the high tensile woven wire fences, but have several questions.

First, the animals I need to contain are.....sheep, alpacas, chickens, and guinea fowl.
I need to keep out dogs and deer.
I do not want electric fencing.

How high should it be?
How far should the spacing be on the fence openings? 6"?
How far apart should the posts be and which posts should I use?

I am looking for the best solution and the most affordable.

Where can I order my materials?

Thank in advance. I really appreciate and input as this has had my head spinning for a while. Dogs keep entering my property and I've had losses. :(

I like woven wire with braced wooden posts at the corners and gates, and metal T posts for the straight lines. The smaller the holes are, the less likely critters are to pass through. I have sheep fence and it has 4 inch holes, I love it, but it was more costly than standard field fence.

You can buy this stuff at Theissens, Tractor Supply, or any other farm store.
