I've heard that mucking out your paddocks is good for your horses. Is that true? If so, how often would it be needed? We have 7 acres of field space that our two horses are in about 10 hours a day.

You could clean up any areas that they tend to use as frequently, if there are multiple piles. But I personally would not be concerned about chasing down every turd in 7 acres if you only have 2 horses on it...
