rasing rabbits to sell meat to resaurants

my father lives in northern california and needs information on the regulations and laws regarding raising rabbits to sell to restaurants and farmers markets. there is a usda certified butcher in his town who could process the rabbits if necessary to comply with laws. what are the laws for people raising rabbits with the end goal of selling to restaurants? what are the regulations do the laws very from regulations permitting sale at farmers markets? essentially i need info, on what hoops need to be jumped through for my dad to be able to raise rabbits and sell the meat to local establishments and at farmers markets legally in california. can he sell the pelts? thank you for the info

It varies by state on what is legal and what is not. Your best bet is to start with the California USDA.

Especially living in such an over-legislated state like CA, you'll want to make absolutely certain that you have all the "I's" dotted and "T's" crossed... You could also possibly contact a local butcher or privately run meat store and see if they can help you with contacts or information. As for pelt sales, you'd have to contact someone else who's doing it legally and see what's involved. You could also start out by contacting the county extension office, who work with USDA and other govt agencies for all things agricultural/farming.
