SODIUM NITRATE is really bad for you. I was even told that sodium nitrate was used to make explosives. It is a hard core preservative that we don't choose to put in our bodies.
And FDA doesn't allow the use of SODIUM NITRATE in any commercially prepared bacon.

Sodium NITRITE is approved by FISA but only at levels less than 200ppm.

Some people tend to confuse the 2, just as some like to claim that margarine is just one molecule away from plastic. In the scientific realm, many compounds are just one molecule or even one tiny atom different than another compound or element. Take one tiny oxygen atom away from water and you have one of the most volatile and flammable agents in the universe--
