Hi all - I recently found a website for making cheese that really helped me to step up our cheese making. Cheese making is part science and part art, but you have to be able to do the science part before you can do the art part. Anyway, when you get to the page, follow the links to the "Beginning Cheese Making" page. A few simple points brought to light will really help your cheese making!

Thank you... I am going to start making cheese as soon as I start producing more milk than we drink...

We were pretty good at making Chevre and some of the softer cheeses, but we never had good results from making harder cheese. This website put us on the right track and our first attempt at making a mozzarella type cheese using the information from this website worked wonderfully. Today I am making a second attempt and when we have good results 3 times in a row we will consider it a successful recipe.
