When chilling carcasses, we always use ice water in large coolers. Ice water will chill faster and colder than the air temperature in a refrigerator.

By quartering that ewe when you butchered her, you would have been able to bleed her out better too.

Next time you will have a better idea of what to do. Everything we do involves learning. This experience was not wasted even if most of the meat goes to dog food. Just tell yourself that she was an old tough ewe and would have needed stewing to be edible!
