Heavy Cream vs 1/2 & 1/2

I am wanting to make homemade ice cream using cream from our Jersey. The recipe I have always used calls for 3 cups of half & half and 1 cup of heavy cream. I have fresh cream that I separated. What is the difference between half and half and heavy cream? If I used 4 cups of cream, how is that different.

Honestly - I think your ice cream would be AMAZING with full cream! :)

I would thing half and half is just half whole milk, half heavy cream. Could be wrong there though. I agree with Jenn, I think all cream would make an awesome ice cream.

YMMV (your mileage may vary), but one time I upped the cream percentage in a batch of homemade ice cream (I had extra cream and wanted to use it up). I wasn't happy with the results. The ice cream had a strange mouth feel - almost like a 'greasy' texture.

If you try making ice cream with all cream, please post on how it turns out!

I did some checking and 1/2 & 1/2 is half cream and half milk. I think I am going to try using 2 1/2 cups of cream and 1 1/2 cups of fresh goat milk and see how that works. It should be the same ratio as the recipe calls for.
