Our steer is around that weight. We have 3 more around the same weight but that one steer is driving this old lady crazy and I'm ready to eat him. I would fatten him up for 4 more weeks that would add a little weight. What would your alls guess be on the hanging weight of him be?
Let me say hi now. I'm from backyardchickens.com

Just guessing, but I know most lose 50 percent, and a holstein is more bone than a beef breed so could possible be 60 percent loss, so between 250 - 300? Like I said just a guess. I took in my giant steers and they butchered out for a hanging weight of 700, they were well over 1400 pounds live weight.

Live wt to hanging weight will yield about 60-70% depending on breed and age.
Hanging wt to cut & packaged wt will yield 60% of hanging wt--depending on finish, how you want it cut and trimmed.

600lbs on the hoof will probably net less than 250 lbs cut and wrapped in your freezer.
(also depends if you include liver, tongue, or other guts.)
