I've eaten intact American Blackbelly Rams I've raised from 9 months to 2 and a half years. All were mild, but benefited from a moist heat cooking technique.
well i posted on this thread way back in October and i now have an answer to the question "how does an older ram taste"? the answer is darn good. the ram i had butchered last winter tastes just as good as the younger lambs and there was a lot more of him, lol.
