"Mini" pigs get big. It's still pork. Just a fattier portion. The meat will vary in taste with various breeds. I've raised AGHs with success and they were excellent taste. The meat was red, not "the other white meat" variety.
Well I’ve got 2. Wanted to rehome them. Now I’m just thinking maybe sausage. The butcher has a minimum hanging weight so I’m researching to see if it’s worth it.
