Okay, time for lunch and dinner!
I'm exhausted. Me and his wife were mostly just shivering to death, but occasionally helping, plus me adjusting the tractor as needed.

Very heavy head.
The hide, huge! And so heavy!! He said its thinner, more like sheep, not my sheep, lol, but big meat sheep type.

Other than the shot fiasco....He was very respectful and professional. Supposedly, they've shot larger and giants with that weapon and they drop no problem. He fed him treats and little pets before his wife showed up, he seemed disappointed that he was a bad bull, as am I. Thought he was beautiful and a shame his mind wasn't the same. He gave tips for my tractor I didn't know yet, talked a lot about parts, process and such of the beef, then the LGDs showed up and he couldn't stop himself from giving them scraps. Young dog is very stuffed!

He noted small testicles. Zebu don't have big ones. Compared them to large sheep. Yep, but kinda interesting.

Spine bones were difficult to get through. Dude is so dense.

And he had tons of fat from just being grass fed!

Once he was down, it was a very positive experience. Lots of things to learn, crack jokes about, share stories and such. Easy to get along with them.

And brisket was one band of meat encased in fat.

It is definitely a huge job... I feel for you out in that cold biting wind today...it was miserable cold here in the wind today.... the only saving grace is the cold will chill down the meat really good... and tomorrow it will be cold too... really should let it hang to age a bit... if you do, at least the next few days will not be too warm.

One of the reasons all the bos indicus....zebu type.... cattle do well in hotter climates, is their thinner skin... and their resistance to diseases and insects.... the bos taurus.... english type... angus, hereford and all those breeds... do a little better in cooler climates and have thicker skins...

He did have a huge skin.... and it looks like you all did a very good job skinning him... sure he will have to be "fleshed" but it is hard to do the thinner skinned ones without accidentally cutting some holes...

Another very long day out in the bitter cold. 43+ bags of ground, soup bones and cuts.

There'd be about a 5 gallon bucket of meat, bone and dog food, if I hadn't of said they could take a sliver to try.

Anyway.

A boatload is in two freezers and 3 bags in fridge to try out the vacuum sealer DH got for this project.

A lot more chit chatting & tips on how to do what with what. 😵‍💫 Should of just left a camera recording. Lol

It better taste good or I won't be buying dog food all winter long.
But if it is good, we won't need to buy meat for years...DH eats like a bird, like my mother says. While I eat 3-4× a day like a teenager. 😅 Evens out to not a ton gets eaten as you'd think.

Removed 4 big rabbits to thaw for the dogs and laid out the rest along the bottom. Covered them in plastic and then carefully laid out the bags. Another plastic layer and put 3 big rabbits on top. All the rabbits have been frozen, so hoping they help.
Then filled the other freezer. Tried to even it out to freeze better.
