Peteyfoozer’s Journey (because journaling’s not enough)

Muscovy duck breast is supposed to be real good in a sous vide. Never tried it, my dog Trip killed and ate my muscovies without the sous vide and I didn't have a sous vide anyway....... bad dog.

Cody is about the same. No. One. is hiring. He’s still doing odd jobs trying to pay his bills

I put a 4lb beef sirloin tip roast un the sous vide. (It’s a water bath that stays at a fixed temp. The meat goes in a leak proof bag in water so can never over cook. Comes out perfect, whether it’s in there for 10 hr or 24 hours!) A perfect med rare, and I put it through the slicer really thin. Superb roast beast sammich potential!! That’s what I plan for dinner tomorrow night. I have kaiser rolls and am going to make a mild horseradish sauce to go on the buns. That and do the last 2 jars of french fries.
Going into Burns tomorrow so it’ll be an easy fix.
What sous vide unit do you have? I've been looking at them. I'm trying to start making our own lunch meat and some video's people used the sous vide units to keep the temps constant for cooking.

I got an immersible and a big container, which isn’t necessary but was convenient for me, as it has “shelf” that helps keep your meat under the water

It’s perfect for roast beef!

This is the same Sous Vide my son bought, he also bought a large container for it. I like the container you have better.

I believe some Instant Pot pressure cookers have a Sous Vide feature.
