Pork~Pork Soup and Pork Rollups from Pork Shank

Pork Shank
Prep Time: 10 minutes
Cook Time: 1 1/2 hours
Servings: depends on what you use it for

Ingredients:
3.71lb picnic pork shank half*
2 Tbs garlic powder
2Tbs onion powder
1 1/2 Tbs salt
2Tbs black pepper
2Tbs chili powder
aluminum foil

Preperation:
First I cut off the huge chunk of skin/fat that was on the side of the shank.
Mix together all of the spices to make a spice rub. Sprinkle the spice rub all over the shank and pat it in to make it stick good. Place the shank in aluminum foil and wrap it up good. Put foil packet on a baking sheet and place in a 425 degree oven. Cook for 1 1/2 hours.
*Picnic refers to an untrimmed piece of meat / the fat being left on. If purchasing a regular shank half, then the trimming step may be skipped.

Make sandwiches
Make soup (Recipe below)
Pulled Pork Roll Ups(I will add this recipe after I do it.)

Pork Soup
Prep Time: 15 minutes
Cook Time:12 minutes
Servings: 8
Ingredients:
Pork from the pork shank recipe (cut up or pulled apart)
32oz bag of frozen mixed vegetables
2 cups water
pot to cook it all in.

Preperation:
Bring water and drippings to a boil. Add mixed vegetables and pork. Stir until mixture has returned to a boil. Cover and let simmer for 10 to 12 minutes or until vegetable are tender. Serve.

Pulled Pork Rollups
Prep Time:20 minutes
Cook Time: 15 minutes
Servings: 8
Ingredients:
2 cups pulled pork from previously prepared pork shank
1 clove garlic-pressed or diced
1/2 medium onion-diced
1/3 cp ketchup
1/4 cp apple cider vinegar
1 tsp salt
1 tsp black pepper
1 Tbs lemon juice
1 can of refrigerated crescent rolls

Preperation:
Mix together ketchup, vinegar, salt, pepper, and lemon juice in a pot and bring to a boil. Add pulled pork. Reduce heat and simmer for 5 minutes. Brown onion and garlic and add to pork mixture. When filling is done, place spoonfuls on crescent dough and roll up. Place rollups in 350 degree oven and follow directions on crescent roll can to bake the pastry. The rolls should be golden brown. Remove from oven, let cool for a few minutes and enjoy!
