1 skinned baked potato
powdered sugar
peanut butter

Take 1 skinned baked potato and break it up using the mixier.

Add powdered sugar until thick--it will get real runny first-just keep adding the powdered sugar and it will thicken.

Roll out onto wax paper.

Spread with Peanut Butter.

Fold in half or put another pre-rolled batch on top.

Cut and enjoy.

**You could add food coloring or flavorings (I would do this in the liquid stage) to dress it up some.

WOW would of never dreamed of a fudge recipe being this simple. Sounds yummy too:p

That's also known as PA Dutch Potato Candy!
We make it with the leftover mashed potatoes after a holiday dinner. Figure about 1/2 cup or so mashed potatoes and 2 lbs of 10X sugar. We roll it up jellyroll fashion and slice it.

OK potato should be removed from the name, 1 lil ol baked tater and 1 1/2 pounds of powder sugar plus penutbutter makes it "pure sugar with penutbutter on it candy"

dont zactly roll off the ol tounge tho does it? lol

oh yeah by the way, i like mine with slitherd almonds on top the p-nutbutter :D

My German grandmother makes this all the time using mashed potatoes. She calls it Ole Fashioned Potato Candy. She rolls it into a log and cuts slices.

It's good but very sweet...and yes a lot of sugar for such a small amount of potato :p

Since I'm allergic to peanuts, I use cashew butter...yum!
