Rhubarb Dream Dessert

RHUBARB DREAM DESSERT

Crust:
1 c. flour
3 T. sugar
c. butter

Topping:
1 c. sugar
c. flour
tsp salt
2 eggs, beaten
2 c. chopped rhubarb

Blend together flour, sugar, and butter.
Press mixture into 7x11 pan.
Bake at 350 degrees for 15 minutes.

Sift together sugar, flour, and salt.
Mix in eggs and chopped rhubarb.
Spoon this on crust.
Bake again at 350 for 35 min.

Here it's getting the end of rhubarb season. Then this fall I will mulch it down with a good thick layer of old rotted manure. Rhubarb loves a good dose of manure or compost every year.
