I saw GFG's post about using eggs and thought I'd post this.
I hope you enjoy it!

Pound Cake

3 C Flour
3 C Sugar
3 tsp Baking Powder
1 C Milk
6 Eggs (large)**
1 tsp Vanilla
1 tsp Almond or Lemon Extract
3 Sticks Butter, softened

**When I use medium sized eggs (1.75-2 oz) I use 7 eggs.
**When I use small sized eggs (1.5-1.75 oz) I use 8 eggs.
**When I use pullet sized eggs (less than 1.5 oz) I use 10 eggs.

Combine all ingredients in a large mixing bowl.
Mix at high speed for 5 minutes.
Pour into two greased and floured loaf pans.
Bake at 350* for about an hour.

Wow great recipe, thanks! I have tried this myself, although I've used brown sugar because I ran out of white. LOL Anyway, I followed your measurements and it came out really good. I think the brown sugar even made it moist, which is what I prefer in pound cakes. I poured freshly whipped cream and strawberries on top and partnered it with tea. Lovely!!! Thanks again, and please keep the recipes coming!

I have this recipe book that is called the Cake Doctor...it used boxed cakes and makes tons of really fancy cakes..cookies, Yule logs, etc. I make a white choc pound cake from that book..it’s my son’s favorite. I’m going to try this though!
