I didn't know what it was called, but it is not the sheep's favorite. They will eat it, they go for the seed heads first. Looks like they missed a couple. It makes a big clump. I think I have broom sedge too. They absolutely don't eat that. I'll get pictures and post them for confirmation.
I know what broomsedge is and looks like, but I don't have any here.

Glycosphate is the only thing I know of that will kill it but it will kill your grass as well. I've had them growing along the edge of my pond and used EraserAQ (mixed at a 2% ratio to water). It is a generic version of glycosphate branded Dow Rodeo & approved for use around water. I was not very successful but only applied it one year.

Thankfully it hasn't made it to the pond's edge yet - but it is thick in low areas that stay damp.
Glycosphate is the only thing I know of that will kill it but it will kill your grass as well.
At this point we've gotta do something. Thanks for the recommendation!
