What to do with beets and excess zucchini - bounty in the heat!

Hi all,

So, wouldn't you know the beets and the zucchini have both totally taken off. I think the beets need to be harvested NOW (they were planted 53 days ago, the package says 59 days to maturity, but they appear to be about 2 1/2- 3 inches in diameter).

Wise ones, what should I do with my produce? I'm a little daunted by the thought of canning when it's been so hot out, unless I do it tomorrow morning or over the weekend. Can I harvest the beets today and store them (where?) for a couple of days, and then can?

Any good canned zucchini recipes? I only see zucchini relish and bread & butter pickles (which we find too sweet) in my Ball canning book. I could shred and freeze it for later, I suppose...

HELP!!:p

You can harvest and store in the fridge or cool basement.

Can the beets and send me the zucchini. :D Otherwise, you can freeze zucchini.

Should the beets and zucchini go in the fridge until I'm ready for them? Crisper drawers, in bags or not, with or without moist paper towel, etc.? Do I leave the tops on the beets or remove them?

You can put them in a plastic shopping bag with a paper towel for moisture and set them anywhere cool.

You can remove the tops on the beets.

That's easy!
Beets, leave then in the ground until I get back from Idaho and then bring them over here!
Zuchini, leave them on the vine until I get back from Idaho and then bring them over here!


Can your beets!
I throw Zucchini out into the yard, what the dogs don't eat, the birds will!

Chocolate Zucchini Cake:
Beat 4 eggs until thick. gradually add 3 cups sugar, then 1 3/4 cups oil.
Combine 3 cups flour, 3/4 cup cocoa, 1 tsp baking soda
1 tsp salt, then add to first mixture.
Finally, fold in 3 cups grated zucchini and (optional) 1 cup chopped nuts.
Bake @ 350 in a 10 inch tube pan for 1 1/4 hrs.

I know it's too hot to bake, but I usually make 2 of them at once so I only heat the kitchen up half as much! This is so moist you may not need icing.


Pickled Beets: cook beets first, peel, then can with a liquid mixture consisting of 1/3 sugar 1/3 vinegar and 1/3 water

Hi ,can anybody help?...In the Choc Zucc cake above, Immgs refers to a 10 inch Tube Pan,is this a Spring form cake tin??...Has anybody tried this recipe and does it make two layers from this amount of mix???

Any help will be of great value as we want to try it!!!!
