Loving the herd life
Hi all,
So, wouldn't you know the beets and the zucchini have both totally taken off. I think the beets need to be harvested NOW (they were planted 53 days ago, the package says 59 days to maturity, but they appear to be about 2 1/2- 3 inches in diameter).
Wise ones, what should I do with my produce? I'm a little daunted by the thought of canning when it's been so hot out, unless I do it tomorrow morning or over the weekend. Can I harvest the beets today and store them (where?) for a couple of days, and then can?
Any good canned zucchini recipes? I only see zucchini relish and bread & butter pickles (which we find too sweet) in my Ball canning book. I could shred and freeze it for later, I suppose...
