butcher block to frying pan?

This is probably a stupid question, but can you cook a rabbit right after it is butchered? I did my first chicken a few months ago, and I brought it right inside and fried it up. I didn't know you were supposed to let it rest in the fridge for a few days for the rigamortis to settle. I was wondering why it was so dang tough.

I do it all the time after each time I butcher I cook 1, you just cannot over cook it and you have to cook it SLOW, it does help to let it rest in the fridge though in general. :thumbsup

It's the same thing as with chickens, in my opinion. If you can get it in the frying pan before rigor even starts, then it'll be fine. But once rigor starts, you need to let it finish before cooking it, or it will be tougher than it needs to be.

If it is a young rabbit and you rinse with tepid water, not cold, AND you cook it long and slow, then yes. Otherwise, let it rest the couple days...the taste is worth the wait!
