Decided to make a pie today using strawberries and rhubarb, as both were getting freezer burn from a lengthy stay in there.

The filling was a bit mushy, probably due to the age of the fruit, so I added a little extra flour.

I lost one small section, edge of the crust, and only a little bit of filling, hardly anything really.

And it's delicious!

I made three changes:

1. Lattice top crust
2. Added extra flour as the fruit was mushy from being frozen
3. After 35 minutes I took off the foil, but turned the oven down to 350° for the final browning/cooking

Oh, and I only had two cups of strawberries, so I topped it off with the rest of the rhubarb, about a cup. All worked out.

Oh that pie looks so good - strawberry rhubarb pie is my absolute fave. For the life of me I can not grow rhubarb here. I don't think the climate is right for it.

There's an older gentleman who grows and sells it locally. I suspect he gives it some shelter from direct sun and heat. So, I bought seeds, and am going to try growing it myself.

We grew 2 or 3 different varieties at Wades mill when I worked there... huge plants... When they sold it, the new owners took all the garden area out and the asparagus beds and rhubarb were demolished... It was out in full sun...

Yeah -- won't grow here. Good to know it wasn't me! I did grow a lot of it when we lived in the midwest - couldn't kill it if we tried!
