Ok the property i will have is currently used for sugarcane. once cleared i want to plant a mixture of grasses, any advice on what kinds of grasses I should use. Keep in mind, it will be in South Louisiana.
Depends on what your goals are....

What kind of livestock and/ or what kind of wildlife you want to encourage.

Me... I would pick wildlife friendly plants, especially those good for ground nesting birds.

I am particularly fond of Bouteloua curtipendula (sideoats grama) .

And for ground nesters Andropogon gerardii (big bluestem) is the best, but a pain to grow from seed. I might seed the pasture in other stuff... then buy 20 big bluestem potted plants and plant them.

You should be able to stop by your local ag extension office and ask for information.

My family is mostly from Texas... but my dad and I both lived in New Orleans as little kids.

As to wildlife. . If you build the stuff they need they will come. ;)

I am partial to the ground nesters, and the tiny warblers.
