I see the white trim on some of the piggies. Trademark of Berkshires, out to make some good pork. Dont throw away the fat! Render it down and can it in quart jars. Great for cooking and makes best pie crust ever.
How long will the fat last in a jar on the shelf? I guess the jar will be steralised, and once opened, it will last a while in the fridge?

I have a friend who was very poor as a child. Her dad slaughtered a hog and made sausage. To preserve it, he cooked the sausage patties and layered them in a crock. He poured melted lard over each layer until the crock was filled with cooked sausage patties. Sealed top with melted lard and they took them off layer by layer, recooked in a skillet and breakfast was ready.

I bought my 2004 Lariat when I worked as a sales person at a Ford dealership. I got it at invoice, plus a no interest sale. I surprised BJ with it and he was delighted. Who wouldn’t be? He mostly drove it to work, 3 miles away. I used it to go get feed and hay. HE was hard on everything he/we had. I took care of everything he/we had. Somehow the truck survived him, the other trucks we had didn’t fare so well. BJ had 2 speeds, wide open and asleep. 😂😂😂😂😂

Yes, it was boiling hot, basically. Tight lids. I've never had an issue with lard, this way. You have to have the jars heated to add this hot liquid. I heat, add a cup or so of the lard in each to start and that increases the glass temp. Continue to fill them, lid them, cool out of any wind. Takes a few hrs to cool. Goes from clear liquid to white solid lard.
