What is "rebel" canning?
There are groups of folks who actually do call themselves "rebel canners" - like @fuzzi said they don't follow the directions put stuff together on their own w/o regard to acidity levels, canning times, etc. And-- alot of them and the "recipes" they use are all over the internet like FB and Printrest.

^^^ Yep yep yep. In today's world, we are seeing more and more strange and sometimes deadly pathogens surviving thru time tested Industrial Canning (which is entirely different than home canning). Its quite shocking to Quality Control departments at the major food manufacturers.

I'm not risking that with my measly home canning. Nope.

I will just stay with backyard herds to get the recipes and advice on canning. I'm not looking to kill anyone

Just FYI if new to canning & investing in equipment -- these All American canners are heavy. I have one, a smaller one that's more than adequate for me, 7 qt jars at a time. Even when jars come out, that rascal with water is weighty. Be advised😁 Plus, the double stackers may not fit under a "vent hood" on your stove. Measure for that. So, I also have an old presto, also heavy, slightly less than my AA. Both are older models, bought new. The current models may be lighter weight 🤷

I'm just pointing this out because of all the on-line buying in today's market. Check before you press "buy".

Another thing -- jars & lids. Nowadays big $$. Check new package prices for a base. Then, look for yard sales, Craigslist offerings, etc. the jars can last "forever"...lids are basically 1x use. To say you have/need a few hundred isn't far off if you have a garden to can for a year of food. It's a choice & commitment you make. Let's face it, you don't buy a big $$ canner for 20 qts of tomatoes. And, you need storage for full & empties.

I've canned for years, since kids were in diapers, so over 55 yrs. Just pointing out some things that are needs after you start up, maybe not considered in the excitement of a new food system.

I have a microwave over the stove in this house and I hate it. I cannot get my canner under the darn thing. One of these days I'm gonna buy a vent a hood and hire somebody to take that darn microwave out and install a new vent a hood.
