What is "rebel" canning?
There are groups of folks who actually do call themselves "rebel canners" - like @fuzzi said they don't follow the directions put stuff together on their own w/o regard to acidity levels, canning times, etc. And-- alot of them and the "recipes" they use are all over the internet like FB and Printrest.

^^^ Yep yep yep. In today's world, we are seeing more and more strange and sometimes deadly pathogens surviving thru time tested Industrial Canning (which is entirely different than home canning). Its quite shocking to Quality Control departments at the major food manufacturers.

I'm not risking that with my measly home canning. Nope.

I will just stay with backyard herds to get the recipes and advice on canning. I'm not looking to kill anyone

I have the Ball Book of Canning, plus the pressure canner comes with an instruction booklet that gives pounds of pressure and times for most food groups.
