2 c flour
1/2 c sugar
pinch of salt
2 eggs
teas vanilla
1/3 c veg oil (regular olive oil will work not the extra virgin - 'tis what the nana's used in Italy)

Wisk eggs till foamy, add sugar, vanilla and salt - wisk again. Add flour and stir (not too much).
Take a handful of dough and roll into a log, cut into about 4 inch pieces make an S shape and place on foil lined cookie sheet.
If you want to be fussy brush with an egg wash and maybe sprinkle with sugar.
Bake at 350 for about 20 min

This last batch I added about a 1/4 cup malted milk powder and 1/4 chocolate powder (not cocoa powder) and about another tablespoon of oil.

I think the original recipes call for lemon zest, which would be typically Sicilian where I think it originated.

What I like about it is one bowl, no mixer, and just a few simple ingredients. And it seems to be easy to experiment with.

Made Italian S Cookies and ~experimented by adding malted milk powder and chocolate powder (yeah I'm a malted milk ball candy junkie) -- they turned out ....... ohhhh yum :drool .

Me too! I’ll buy a carton of malted milk balls once or twice a year. I’ll binge and eat them all until I almost make myself sick. Then I don’t want anymore for a long time. LOL

Does kt taping an injured muscle, and freezing warts off at home count as self care?
Anyways, warmer dark morning here, but high of 60. Worked a solid 7 am till 8 pm yesterday, about to head in to work hopefully a few less hours.

How do you freeze off a wart at home? And my taping at home counts as self care. If you have watched it done, no reason why you can’t do it to yourself.

The place we're staying is right by a main road, but it was quiet last night. And we have a view of the lake. I'm so thankful our friends invited us to join them. We will be playing golf at Bear Mountain Ranch. It's beautiful up there. Hopefully the smoke stays away and I can get some good pictures to share.

I'm on my third box :lol: :duc , but slowing down a lot. Dang those little things are addictive!

On that recipe - it doesn't make a ton of cookies - a good thing for just one or two people.

Taking a water break although it’s only in the mid eighties, the humidity is creeping back. I found the hen with at least one chick but I think there are more. Have spent the morning fixing the holes and gaps in a chicken coop that was never meant to be a brooder area. But it’s gone smoothly. Operation Move Henny Penny and Company begins soon. I realized that if Vala went into heat she could stay in the horse trailer. It’s a modest two horse and some gear rig. She would be secure and still have a breeze. Stall mats too. House time if it got too warm. Easily cleaned. I’ll try to get her in soon but I’m hugely relieved to have a secure outdoor option. Now to appropriate a milk crate for the bird family to huddle in.

Good day...overcast but cool enough. Finished list, came inside & did a few things in here. Even cleaned the oven! 😳😵‍💫. Need to empty DW but sidetracked with feed & milking time. I'll get to it shortly...no rush really. Think I'll hit shower first.
