My grandmother didn't measure, or use recipes, how much has changed. I'm like her, a seat-of-the-pants cook as well.
I don't measure for a lot of things, but baking is one that I do. Except for my mom's wheat bread recipe. That one, I learned to use the eyeball and feel method.

Tried a new Sourdough sandwich loaf recipe today. It turned out so good. Hubs wants me to keep making it. He had a tuna sandwich and really enjoyed it.

Very good looking! I made bread yesterday.... didn't work the way I wanted it to... didn't rise as much as it should have... so I thought I would make more today... I put the yeast in the warm water... and a bit later looked at it and was all "huh, that ain't right". I asked kid to come look (he also bakes bread), and asked him, "that looks wrong... correct?" He said yep! Then he asked if they yeast was too old... he found the jar...yep... old.

I thought it worked fine 2 months ago. :lol:

Alas I am wedded to a bread machine. I got one for a wedding gift and Hubbs loved it. So did our Rottweiler. He would sit expectantly sniffling the aroma as the bread was finishing. A bit of drool- never mind. He always got His Piece and was content with it. One day however I was busy outside and came in to find the bread machine (cooled thank goodness) on the floor and the loaf and dog missing. Guilty party was in the next room finishing off the bread. I needed to start another loaf but couldn’t find the mixing paddle which could become lodged in the loaf. Looked at the dog who was at the water bucket washing down his treat. Thankfully I had an extra paddle because when the other one showed up in about a day and a half I wasn’t inclined to use it.
Luckily it was rounded and teflon and caused no issues on its trip.
Ugh 1:30a. Why am I up?

The picture of your bread reminded me of an OCD trait my husband had. He didn't like bread with holes in it. He would pick up loaf after loaf at the store, fanning the slices, peering through the wrapping of the bag-with all the print on it-looking for holes and complaining about them. :lol: :lol:

Why? because when he made toast, the butter and honey leaked out through the holes and it drove him over the edge of despair. :gigI;m sitting here laughing at the mental picture of him rejecting loaf after loaf until he found one with little to no holes.
