Ingredients:
500 g bread flour
350 g spring water
100 g unfed starter
15 g kosher salt

Directions:
mix dough, let sit 1 hour, then every 30 mins stretch and fold (total of 5 times)
Bulk ferment (winter room temp) took about 6-8 hours
Pre-shape and rest 30mins
Shape and put in banneton, cover with plastic bag and put in fridge for approx 28 hours (variable)..
Take out, put on parchment paper, score, place into Dutch oven, spray mist with water from spray bottle, add lid and put in cold oven, set to 450 for 55 mins, removed lid and put back in at 410 for 15 min
Wow - that's really close to my recipe! Only difference is I only use 50g starter and tap water.
