@peteyfoozer have you ever tried “Artisan bread in 5 minutes a day”? You can buy the book from Amazon, but this link is an adapted version.


It’s a no-knead recipe that you mix up and store in your fridge for up to two weeks. Then on the day you want to use it, you spend (roughly) 5 minutes shaping the dough, let it rise 40 minutes, then bake it about 35 minutes.

It’s not sourdough, but it does start to ferment and the longer you keep it in the fridge the more sour it becomes.

I have that book!! It's a good one. It does take up a chunk of space in the 'fridge.

I can’t remember which of these sister forums I read about the book, but I bought it on Amazon a few years back because of what someone posted. I’ve really liked making these breads. I like that they have recipes for a few different grains, and also different chapters on different types of bread.

I do think this recipe doesn’t rise quite as much as other breads. But the flavor is good and we love the crackling crunchy crust. Not having to knead is great. When I want to make normal/other bread, I let the Kitchenaid mixer and dough hook do the kneading for 2 minutes.

Yes. I used to make it before I started doing SD. It’s a really handy way for making soup bowls for stuff like clam chowder too. I had to do 40 once for the ranch. It took a few huge buckets of dough but came out great.
I’ve always enjoyed making bread.
I have an awesome easy french bread recipe I will share too. You just need a baguette pan. Our friend the chef ate a whole loaf by himself once 😂 perfect for dipping in soup or stew

Ingredients:
2 cups hot water (not too hot)
1 TBL yeast
1TBL sugar
proof yeast

add
1 tsp salt
4 cups flour (approx)

Directions:
Put yeast, sugar and water in bowl to proof about 5 minutes
Add 1 tsp salt & 3 cups flour
mix and slowly add 1 more cup flour
knead and add flour as needed
Rise approx 1 hour in greased, covered bowl
Shape into loaves and let rise covered with cloth about 1/2 hour in french bread rack
Bake 20 min @ 400

It’s good stuff and pretty darn quick for a yeast bread 🥖
I put an ad on craigslist for pig-(free) and a guy says he’s willing to come get him. The poor thing has had a miserable life of neglect. Bad feet, a tooth rubbing…even if the guy slaughters him it will be a kindness. My understanding is that pigs are social and he has been neglected and alone since he came 6 years ago. I’m happy for him and glad he’s off our feedbill. The ducks are supposed to become responsibility of the ranch guys as they were foisted on us as well. So now I just need a home for rabbits and all we will have left is Mister, the chickens and Randy’s 40 feral cats.
Pain has been pretty disabling lately. Can’t use my hands so all I can do is read and move from bed to recliner and back. I deleted all social media as I found myself becoming enraged at how people treat others and the inconceivable cruelty towards victims like Charley’s wife. I fired back at some whiny liberal who then reported me and got me deplatformed 😂

Yeah, I don’t need to hear the ugliness out there. I have enough anxiety worrying about my son, whose life has been wrenched from him leaving him homeless, jobless, without retirement or a future. 28 years and he was just tossed aside. It might hurt me more than him as I can hardly breathe thinking about it so I don’t contact him. I miss his weekly texts he always sent.
This was the last one he sent me.

You should txt weekly...just I love you, thinking about you, just a hello. He may need just a touch of remembrance. Invite him to visit .
He’s staying on his girlfriend’s couch. She lives with her grown kids so I guess it’s pretty crowded. I do drop an I ❤️ u on him every now and again but It i can tell it agitates him while he has no answers or direction. I know he will be in contact as soon as he sees a light at the end of his tunnel, so I pray and wait
