A little rough this morning, but I still managed to cut Randy’s hair, top and rinse all the strawberries and put them in a jar because they last so much longer that way, made carmel out of sweetened condensed milk and made real whipped cream, and put it together in a Butter Brickle Carmel Pecan Cheesecake. This stuff is so good it will nearly bring a man to tears. Highly recommend.

Butter Brickle Frozen Delight

Prep Time: 15 mins | Cook Time: 20 mins | Servings: 12

Ingredients:
1 ¼ cups graham cracker crumbs
⅓ cup butter, melted
¼ cup white sugar
1 cup all-purpose flour
¾ cup quick cooking oats
¼ cup brown sugar
½ cup butter, melted
¾ cup chopped pecans
1 (8 ounce) package cream cheese
1 (14 ounce) can sweetened condensed milk
1 (12 ounce) container frozen whipped topping, thawed
1 (12 ounce) jar caramel topping

Directions:
Preheat the oven to 350 degrees F (175 degrees C).
Combine graham cracker crumbs, 1/3 cup melted butter, and white sugar in a medium bowl until well mixed. Press into the bottom of a 9-inch springform pan.
Bake in the preheated oven until set, about 6 minutes. Cool completely.
Raise the oven temperature to 400 degrees F (200 degrees C).
Combine flour, oats, brown sugar, 1/2 cup melted butter, and pecans in a large bowl until well mixed. Lightly pat onto a baking sheet.
Bake in the preheated oven until light brown, 10 to 15 minutes. Crumble while still hot. Cool completely.
Beat cream cheese in a large mixing bowl until smooth. Beat in condensed milk until well blended. Fold in whipped topping.
Spread 1/2 of the cream cheese mixture over the crust in the springform pan. Sprinkle 1/2 of the oat crumbles over the cream cheese mixture, and spread 1/2 of the caramel sauce over that. Repeat layers. Freeze until firm, at least 4 hours. Remove pan sides and serve cold.

Afif outdid himself tonight. He made some incredibly seasoned, perfectly cooked rare beef, smothered in bernaise sauce…it was orgasmic. I think I sprained my eyeballs when they rolled back in my head. His two friends that had dinner with us were hilarious and my face hurts from laughing. Once again, Boone spent the evening being admired. They were all fascinated that he could open the back door and let himself out 😂
It was a wonderful night ❤️

Sadly, Afif left this morning because there’s a big storm on the way and he doesn’t want to get caught in it, in his little truck, so I spent the morning putting the kitchen back together (executive chefs are not known for their housekeeping skills).
Now I have today and tomorrow to figure out what to take down South when we leave Wed morning. Hope it goes smoothly. Boone will be less than thrilled about making this trip.

ANOTHER road trip??? :eek: :idunno :love you're on a roll!! Safe travels....what about Fen?
Fen doesn’t mind traveling aa much. Boone hates it.
However, pain today is overwhelming. I don’t think I can handle this drive. Hopefully Randy will go without me so I don’t feel guilty about him not seeing his daughters
