Peteyfoozer’s Journey (because journaling’s not enough)

Got 2 boules of sourdough in bannetons and french bread rising.
This is tonight’s dinner. I love soup! I was gonna make clam chowder but my clams mysterious disappeared. Haven’t made this in a coon’s age. The little’s loved it!

Cheesy Chicken Chowder

Ingredients:
3 cups chicken broth
2 cups diced peeled potatoes
1 cup diced carrots
1 cup diced celery
1/2 cup diced onion
1 1/2 tsp salt
1/4 tsp pepper

1/4 cup butter
1/3 cup flour
2 cups milk
2 cups shredded cheddar cheese
2 cups diced cooked chicken

Directions:
In 4 quarts saucepan bring chicken broth to boil. reduce heat add potatoes carrots onions celery, salt and pepper.cover and simmer 15 minutes or until vegetables are tender
Meanwhile melt butter in a medium sauce pan add flour and mix well. Gradually stir in milk. cook over low heat until slightly thickened. Stir in cheese and cook until melted add to broth along with chicken. Cook and stir over low heat until heated through

As I never know these days, when I will be able to function I decided it was better to do Thanksgiving early rather than later. It’s a good thing, too, ad I could only get s couple things made then the rest of that day and the next, I would be down recovering. It all came together tonight. Everything made from scratch, cranberry sauce, candied yams (not yukky mashed, but sliced and baked with an orange/maple glaze) cranberry/cornbread stuffing, Gulliver’s corn, mashed taters, turkey, turkey gravy and apple pie.
Bil scored points by trying everything and loving it all while the man reminded me that I hate cooking for him, refusing to eat anything but mashed taters, corn and a couple slices of turkey.

Since I insisted he take bil with him instead of leaving him on my couch in front of tv all day, he’s a different man. He appears to be happy to have something to do, working up at the shop everyday, and just coming down for meals. He speaks more clearly too and has actually been pretty funny I never thought I’d be saying this, but I don’t mind if he stays on the ranch now. I guess being made to feel he was useless by being left here every day must have been as depressing for him as for me.

Pain has been much worse than previous years so I’m concerned about winter.
My son still has no line on longterm employment. I still can’t believe this happened to him. 28 years. He’s worked there since before he was out of high school. I know God must have a plan, I just hope it’s one that will be worth the anguish we’re all going through from this.

Boone is still a good boy, Gizmo is a hemorrhoid and Fen is full of cockleburrs.

The change in BIL situation is something to be thankful for.

Sounds like a lovely Thanksgiving meal. That's good news about the BIL, he just needed something to do. Maybe now he can be trusted to care for the animals when Y'all have to be gone.

Is your son looking for employment on another game ranch? Would he be willing to relocate to Texas? Plenty of game ranches here.
