Peteyfoozer’s Journey (because journaling’s not enough)

Randy and Tom made the trek to town today. I decided to make a Butter Brickle Carmel Pecan cheesecake as we haven’t had one for years.
I ALWAYS have several bricks of cream cheese on hand because I use it a lot.
I got the graham crackers crushed yp and the crust made and was going to get the filling made while the first round of dishes dried…to see I have NO cream cheese. I’m in shock

They were almost back home by the time I found out.

So I had to make a farmer’s cheese to substitute as I didn’t have heavy cream, I don’t have any cultured buttermilk or rennet so I can’t make decent cream cheese.
Curds are draining for the night and pinto beans are soaking for canning in the morning.
Nothing’s easy!

No 10 minute run to the grocery store for you! For me, town is 30 minutes, and people think I live in the middle of nowhere!

Would you be willing to share the recipe. I told my husband about it and I'm pretty sure he would like me to make one for him...lol It sounds so delicious.
 
Butter Brickle Caramel Cheesecake

Desserts

Ingredients:
1 1/4 cup graham cracker crumbs
1/3 cup melted butter
1/4 cup sugar

1 cup flour
3/4 cup oats
1/4 cup brown sugar
1/2 cup melted butter
3/4 cup chopped pecans

1 (8 oz) package cream cheese
1 (14 oz)can sweetened condensed milk
1 (12 oz) container cool whip

1-2 cans sweetened condensed milk for carmel topping

Directions:
1 Preheat oven 350
2 Combine crumbs, butter, white sugar and press nto bottom of springform pan
3 Bake 6 minutes. Cool completely
4 Preheat oven to 400
5 Combine flour, oats, brown sugar, butter and pecans. Lightly pat onto baking sheet
6 Bake 10-15 minutes
7 Beat cream cheese til smooth. Beat in condensed milk til well blended. Fold in whipped topping.
8 Spread 1/2 cheese mix over crust in springform pan, then 1/2 oat crumb topping, 1/2 carmel, repeat
Freeze overnight before serving

PS- I take 2 cans of sweetened condensed milk, completely covered with water in my crockpot and leave it on overnight. It makes the best caramel.! I also use a pastry bag to do the caramel as its easier to control where it goes

Pinto beans are in the canner and the Cowboys’s wife across the way loan me some cream cheese so it’s softening and then I’ll finish making the cheesecake and get it in the freezer because it has to freeze overnight but dang is it good!!
 
I'm only 7 miles from small town 👍🤣 Still nowhere -- evidenced by a DG 7 miles in opposite direction. About 10 houses at one end of street. Most concentrated in a small 1/4 mile area. It's kinda good. Close enough but far enough for both stores & neighbors. Not looking to move unless they sell & tract house the 20 acres on one side & 40 on other side. If not for 10-15 yrs, I'd even be ok with that. Just sell out for big $$$. :lol: :old

The cheesecake looks/sounds delish!!
I have goat cheese & goat milk cajeta already.
No cool whip or grahams -- but close.
